Cheesy Yorkshire Chicken


Cheesy Yorkshire Chicken
4 servings

Several tablespoons of oil
2 ¼ lbs chicken, cut up
¾ cup flour
¾ tsp. baking powder
½ tsp. salt
1 cup evaporated skim milk
2 eggs, beaten
2 ounces cheddar cheese, grated (add tons more)
2 T. minced onion
2 tsp. parsley, chopped

Preheat oven to 400 degrees F.  Place oil in 9x13” pan; add chicken & turn to coat with oil.  Bake 40 minutes or until fork tender.

Yorkshire Pudding
Sift together flour, baking powder, & salt.  Beat in eggs & milk, then fold in remaining ingredients.  Remove chicken from oven & pour Yorkshire Pudding mixture over chicken.  Return to oven & bake 20 mins or until puffed & browned.
