CAKE
Mix the dry ingredients
in large bowl:
1 ½ cups sugar
2 cups flour
2/3 cups Sweetened Flake coconut
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 cups shredded carrots
1 cup broken walnuts
Mix the wet ingredients
in another large bowl:
3 eggs
1 ½ cups crushed pineapple, drained
2 tsp. vanilla
Empty wet ingredients into dry & stir well. Do not beat.
Pour into a well greased 9 x 13 inch pan. Bake @ 350 degrees F. for 40-45 minutes.
FROSTING
Beat together:
6-8 ounces of Cream Cheese
¼ lb. butter (1 stick)
1 lb. unsifted powdered sugar = about 4-1/4 cup
1 tsp. vanilla
