Aunt Blanche's Carrot Cake

Yes, there is an Aunt Blanche.  She lived in Clarkston, WA & was Grammy's sister-in-law.  Aunt Blanche was married to Grammy's brother, Earl.  Boy, they don't hand out names like that anymore.  Anyway, this cake was worth the trip to Clarkston.  This cake is truly magic.



CAKE

Mix the dry ingredients in large bowl:
1 ½ cups sugar
2 cups flour
2/3 cups Sweetened Flake coconut
2 tsp. baking soda
2 tsp. cinnamon
1 tsp. salt
2 cups shredded carrots
1 cup broken walnuts

Mix the wet ingredients in another large bowl:
3 eggs
1 ½ cups crushed pineapple, drained
2 tsp. vanilla

Empty wet ingredients into dry & stir well.  Do not beat.  Pour into a well greased 9 x 13 inch pan.  Bake @ 350 degrees F. for 40-45 minutes.

FROSTING

Beat together:
6-8 ounces of Cream Cheese
¼ lb. butter (1 stick)
1 lb. unsifted powdered sugar = about 4-1/4 cup
1 tsp. vanilla
