Pulled Pork - Nov 23, 2014








7# pork shoulder butt roast
Rub:
2 parts salt
1 part sugar 
cumin
smoked paprika
chile pepper
cayenne pepper
Sear in bacon grease then add olive oil, garlic, & onion.
Deglaze with homemade stock.
Add oregano, cinnamon, lime juice, 4 clementines (juiced then toss peels in as well), 2 ancho chiles, onion, garlic.
Braise @ 250 degrees F for 6 hours. (Low & Slow)
When meat is done, reduce defatted juices by more than 2/3.  This will be used to mix with the pulled pork.
